Do you deliver anywhere in Morocco?
Yes, anywhere in Morocco, at a flat rate of 35 MAD. Delivery is free from 500 MAD of purchase. We do not ship abroad. Full details are on our Shipping page.
Does the charge depend on weight or on my city?
No. The rate is the same for the whole of Morocco, whatever the city, the weight or the number of items.
Why do you ask for a phone number?
Because we confirm every order by call or message before dispatch. This prevents address errors and lost parcels. Without a valid number, dispatch is delayed.
Can I pay on delivery?
Yes, with no ceiling. Card payment is also planned.
Can I collect my order in store?
Not at this time.
Our coffees
What does "specialty coffee" mean?
It is a coffee scoring at least 80 points out of 100 under the Specialty Coffee Association protocol, in blind tasting by certified judges. Our lots range from 81 to 88 points. We explain what that score measures in this article.
Is an 88-point coffee necessarily better than an 84?
It is better executed, not necessarily more to your taste. The score measures quality and cleanliness, not profile. A floral Ethiopian and a woody Indonesian can share the same score and have nothing in common. Choose on aromatic notes and processing first.
Do you sell ground coffee?
Yes. Every coffee is available whole bean or ground, in the grind that matches your method: espresso, filter or French press, at the same price. See our ground coffee and whole bean coffee collections, and our grind guide to choose.
Do you offer decaf?
Yes. Our El Triunfo from Chiapas is water-decaffeinated, without chemical solvent, and scored 83 points. See the Decaf coffee collection.
Are your coffees organic or fair trade?
We display a label only where the certificate exists for the lot concerned. Several of our coffees come from committed cooperatives, but we claim no certification we cannot prove.
Which coffee should I start with?
A washed Latin American: it is the most legible profile for learning to spot acidity, body and length. See the Coffees of the Americas.
Brewing and storage
How much coffee per cup?
Roughly 60 g of coffee per litre of water, or 15 g for a 250 ml cup. Use a scale: a tablespoon can weigh anywhere from 5 to 12 g depending on grind, which is the main cause of inconsistency. All the benchmarks are in this guide.
My coffee is bitter. What should I do?
It is almost always over-extraction: coarsen the grind, or lower the water temperature slightly. Conversely, a sour, flat coffee calls for a finer grind.
Should coffee be kept in the fridge?
No, that is the most widespread mistake. A fridge is humid, coffee absorbs water and odours, and every trip out causes condensation. Keep it whole bean, in its resealed bag, away from light, at room temperature. The five classic mistakes are detailed here.
How long does coffee keep?
It gives its best in the weeks following roasting. Beyond that it remains drinkable but flattens out. Better to match the format to your actual consumption than to try to store it for long.
